Paddington Press.
"This book explores the history of hunting, inseparably linked with the history of mankind itself, through art, literature, archaeology, weaponry and even religion".
I have a copy of the aforementioned books. The both have a lot of material. But another that might be of interest, though I haven't read it cover to cover yet, is:
William Adolf Baille-Grohman
Sport in the Alps 1896.

Several months ago I acquired a book titled "European Hunter" by Dr. Lloyd Newberry. While it does cover some history of hunting not only in Germany and Austria but of much of the European countries it isn't in any sense a concise history of any one country. Mostly it details his hunts in modern Europe along with brief descriptions of each country and its past. Even though the book isn't precisely what your looking for it is an immensely interesting read.

I suggest you look through the listing of publications at the GGCA website, which may include several titles you will like. There is at least one book recounting post war hunting experiences of a now retired General. If you are a member, you will get a nice discount on any purchase.
